It’s almost summer here in the US. For many of us, the temperatures are already rising, and that means getting outside to enjoy a little sunshine, and maybe… a picnic or two.
Here’s an easy recipe you can enjoy anytime, but also makes a great summer side dish for gatherings with friends and family. It’s a flavorful and healthy alternative to typical potato salad and other mayonnaise-heavy dishes.
Ingredients
1 can black beans, rinsed
1 can mixed beans, rinsed
1 can chickpeas, rinsed
1 can Artichokes, drained and chopped
1 can black olives, rinsed
4 Tablespoons green olives, chopped
2 carrots, diced
3 celery, diced
1/2 red onion, diced
2 c baby spinach, chopped
Violife feta (or your favorite crumbly non-dairy cheese)
Directions
- Pour all the ingredients, except the cheese, into a large bowl.
- Add your favorite dressing to desired taste. We recommend something light, like a Balsamic vinegar and oil.
- Mix until combined.
- Adjust with seasonings.
- Top with some Violife feta.
